Description

This is a quick and easy dairy-free French toast that's perfect for breakfast. Top with sugar-free blueberry syrup or cinnamon apple syrup for a yummy and healthy meal.

Ingredients
  • 1/2 cup raw cashews
  • 2 cups water
  • 3 tablespoons pitted dates, chopped
  • 1/8 teaspoon cinnamon, ground
  • dash turmeric, ground
  • 12 slices whole-wheat bread (oil-free)
Instructions
  1. Add cashews and water to blender. Blend until smooth and creamy. Remove one cup of cashew milk.

  2. Add the dates, cinnamon, and turmeric to the blender and blend until smooth.

  3. Add the remaining 1 cup of cashew milk and blend a few more moments.

  4. Pour the mixture into a wide bowl and dip slices of bread in it, one at a time. Be sure to coat them well.

  5. Cook coated bread on a heated griddle or nonstick skillet over medium heat. Turn until both sides are evenly browned.

  6. Serve warm with pure maple syrup, fruit sauce, or toppings of your choice.
