  1. Place onions, red pepper, and garlic in a nonstick skillet with water. Cook, stirring occasionally, until onions are translucent.

  2. Add in liquid aminos and stir until well distributed. 

  3. Add the diced potatoes and onion powder. Mix well. Cook on medium-high for 2-5 minutes until sweet potatoes are nicely browned. Serve.

Note

I've found that baking the potatoes the day before and then refrigerating them overnight yields the best results. The potatoes are easier to dice and hold their shape better when cooking.

You can also make this recipe using only one type of potato. Just use two large potatoes of the same kind (i.e., two sweet potatoes). To make them O'Brien, just add green and red peppers.
