Plant Based Vegan BLT

This plant-based vegan BLT sandwich is a light meal that travels easily. Have it for lunch or dinner or as a light snack.

Who knew eggplant could replace bacon in a BLT and taste so yummy. Not only is it delicious, but it's healthy and nutritious too.

Description

This plant-based vegan BLT with eggplant bacon is not only delicious, but it's healthy and nutritious too. You will need this Eggplant Bacon recipe as well. 

Ingredients
    BLT Sandwich
  • 6 corn tortillas
  • 2 Roma tomatoes, diced
  • 6 romaine lettuce leaves
  • 3 tablespoons Chipotle Mayo
  • 12 eggplant bacon slices
  • Chipotle Mayo
  • 1/3 cup raw, unsalted cashews
  • 1/2 tablespoon lemon juice
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon Braggs liquid aminos
  • 1/2 teaspoon Dijon mustard
  • 1/2 Medjool date
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon chipotle powder
  • 1/2 teaspoon smoked paprika
  • 1/4 cup water
Instructions
    BLT Sandwich
  1. Warm tortillas according to package instructions.

  2. Spread chipotle mayo on tortillas.

  3. Place 2 slices of eggplant bacon (use this Eggplant Bacon recipe) on one side of the tortilla, then top with remaining sandwich ingredients. Fold tortilla close and enjoy!

  5. Add all ingredients to a blender and blend until smooth.

Note

My favorite corn tortillas are made by LaTortilla Factory. They're oil-free and contain a mix of corn and wheat. This makes them easy to fold or roll without breaking apart. They have both yellow and white corn varieties. I'm able to find them in Publix and Whole Foods, or you can order them from Amazon in packs of 8.
