One of my favorite snacks is this cinnamon granola crunch. It's so delicious and healthy too. You can eat it as a snack between meals or add plant-based milk for a yummy breakfast cereal.

Description

This cinnamon granola crunch is loaded with flavor and is a healthy snack. Eat it plain or add plant-based milk for a yummy and nutritious breakfast.

Ingredients
  • 5 cups rolled oats
  • 3 tablespoons flaxseeds, whole
  • 1 cup walnuts, chopped
  • 1 teaspoon ground cinnamon
  • 3 tablespoons peanut butter, all natural (optional)
  • 4 tablespoons pure maple syrup
  • 1/3 cup raisins
  • 1/3 cup dried cranberries, unsweetened
Instructions
  1. Preheat oven to 350 degrees F. Line one large baking sheet with parchment paper.

  2. In a large mixing bowl, combine oats, flaxseeds, walnuts, and cinnamon. Stir until well combined.

  3. Add peanut butter and syrup. Mix well to ensure that the oats are evenly coated with peanut butter and syrup.

  4. Spread the mixture evenly on the baking trays. Bake for 15 minutes then remove from oven.

  5. Stir granola with a spatula to redistribute the ingredients. Return to the oven and bake for 10 more minutes.

  6. Remove granola from oven and stir in raisins and cranberries. Let cool 1 hour.

  7. Once cooled, store the granola in an airtight container at room temperature for 1 to 2 weeks.

    This granola also freezes well. Transfer it to a sealed freezer bag and freeze for up to 3 months. The dried fruit can freeze solid, so it's best to let it warm to room temperature for 10 to 15 minutes before serving.

Note

Oats will still seem a little wet when you take them out of the oven. Don't worry! They will crisp up as they cool down.
