One of my favorite snacks is this cinnamon granola crunch. It’s so delicious and healthy too. You can eat it as a snack between meals or add plant-based milk for a yummy breakfast cereal.

Ingredients
Instructions
-
Preheat oven to 350 degrees F. Line one large baking sheet with parchment paper.
-
In a large mixing bowl, combine oats, flaxseeds, walnuts, and cinnamon. Stir until well combined.
-
Add peanut butter and syrup. Mix well to ensure that the oats are evenly coated with peanut butter and syrup.
-
Spread the mixture evenly on the baking trays. Bake for 15 minutes then remove from oven.
-
Stir granola with a spatula to redistribute the ingredients. Return to the oven and bake for 10 more minutes.
-
Remove granola from oven and stir in raisins and cranberries. Let cool 1 hour.
-
Once cooled, store the granola in an airtight container at room temperature for 1 to 2 weeks.
This granola also freezes well. Transfer it to a sealed freezer bag and freeze for up to 3 months. The dried fruit can freeze solid, so it's best to let it warm to room temperature for 10 to 15 minutes before serving.

Note
Oats will still seem a little wet when you take them out of the oven. Don't worry! They will crisp up as they cool down.
