Peel, core, and slice apples.
In a saucepan, combine the apples, maple syrup, cinnamon, vanilla, pecans, and water. Stir to combine.
Over medium heat, cook, stirring occasionally, until apples are soft, about 10 minutes. Add more water if needed to keep the apples from sticking.
Serve warm over crispy oatmeal waffles or pancakes. Store extra in fridge for up to two weeks.
