I absolutely love oatmeal. There's something about it that's so comforting. And one of my favorite breakfasts is overnight oats with blueberries. Soaking the oats overnight gives is such a delightfully chewy texture that's creamy and oh-so-delicious.

Description

Overnight oats with blueberries is a quick breakfast that travels well. This creamy comfort dish is not only healthy, it's easy and delicious.

Ingredients
  • 1 cup rolled oats
  • 1 cup plant milk, unsweetened
  • 1/2 teaspoon cinnamon
  • 1/2 cup blueberries
  • 1 tablespoon stevia (or maple syrup)
  • 1 teaspoon chia seeds (optional)
Instructions
  1. Layer the ingredients in a 12 oz jar starting with the blueberries.

  2. Next, add oats, cinnamon and stevia.

  3. Pour milk over oats then sprinkle with chia seeds (optional).

  4. Refrigerate overnight or for at least 6 hours. 

  5. The next morning, you can add additional liquid if needed. Top with fruit and/or nuts (optional). Eat it cold or warm in the microwave.
