Description

This Sweet Potato Cabbage Soup is deliciously comforting and incredibly healthy. It's also a time-saver because you can throw all of the ingredients into your Insta-Pot and go about your day.

Ingredients
  • 2 medium sweet potatoes (peeled and cut into small cubes)
  • 1/2 cabbage, chopped (about 5 cups)
  • 3 cans diced tomatoes, 15 oz
  • 3 carrots, peeled and sliced
  • 3 celery ribs, diced
  • 1 large onion, chopped
  • 2 red bell peppers, chopped
  • 2 cans kidney or navy beans, 15 oz (rinsed and drained)
  • 1 teaspoon garlic, minced (1 clove)
  • 1/2 lemon, juice
  • 2 cups low-sodium vegetable broth
  • 2 cups water
  • 1/8 teaspoon allspice
  • 1 teaspoon paprika
  • 2 bay leaves
Instructions
  1. Optional: Press the saute option on the Instant Pot and add onions, garlic, and celery.  Saute for 2 to 3 minutes.

  2. Add remaining ingredients and stir slightly to combine.

  3. Place the lid on the pot and turn the vent knob to seal.

  4. Press the Pressure Cook button and set timer to 15 minutes.

  5. Once finished, allow the pressure to release naturally for 10 to 15 minutes before opening the vent.

Note

This recipe makes enough for a few meals. I've even frozen lunch-sized portions and thawed them on days when I had little time to cook.
