Chipotle vegan chickpea tuna salad

This chipotle-flavored vegan Chickpea Tuna Salad recipe is hands-down one of my favorites. I used to love tuna salad during my college days and missed it when I became vegan.

And though this doesn't taste exactly like tuna, the combination of ingredients and the texture of the chickpeas make this an excellent replacement.

To make it chipotle flavored, I simply added my chipotle mayo to the mix. If you'd prefer a less spicy version, you can replace the chipotle mayo with your choice of vegan mayo.

Looking for a vegan replacement for tuna salad? This Chipotle Chickpea Tuna Salad is a great one to try.

Ingredients
  • 15 ounces can chickpeas (roughly 1 1/2 cups cooked chickpeas)
  • 2 tablespoons red onion (chopped)
  • 2 tablespoons sweet relish (or finely chopped pickles)
  • 3 tablespoons raisins
  • 1/4 cup vegan chipotle mayo (see Notes section)
  • 2 wheat or corn tortillas
Instructions
  1. Add chickpeas to a bowl and mash using a potato masher or a fork. 

    You can also use a food processor for this dish. Just add all of the ingredients except the raisins and pulse around 5 times (so it doesn't become too mushy). Transfer to a bowl and then add the raisins.
  2. Add remaining ingredients and stir until combined. Taste and adjust seasonings to your taste.

  3. Serve as a wrap on a corn tortilla, in wheat pocket bread, or on lettuce leaves. It's also great in a sandwich or on crackers. Enjoy!

Use this chipotle mayo recipe for best results.
