I love a good salad and this Asian-inspired chopped salad is so flavorful. The vibrant colors make this salad a centerpiece. And its combination of flavors makes it a delicious choice.

Description

This Asian-inspired chopped salad is vibrant and flavorful. Combine it with an entrée for a filling meal, or make it the star dish.

Ingredients
  • 1 head romaine lettuce
  • 1 1/2 cup white cabbage (thinly sliced)
  • 1 1/2 cup purple cabbage (thinly sliced)
  • 3 green onions (chopped)
  • 1 cup carrots (shredded)
  • 1 red bell pepper (cut into thin strips)
  • 1/2 cup cilantro (chopped)
  • For the Sesame Ginger Dressing
  • 2 cloves garlic (minced)
  • 1/2 teaspoon fresh ginger (grated)
  • 1/4 cup light soy sauce (or Bragg's liquid aminos)
  • 1/4 cup pure maple syrup
  • 2 tablespoons hoisin sauce
  • 2 teaspoons cornstarch + 2 teaspoons water (stirred together)
  • 1/2 teaspoon sesame seeds
  • 1 tablespoon rice vinegar
  • 1/2 cup low-sodium vegetable broth (or water)
Instructions
  1. Chop romaine and cabbages. Place in a large bowl.

  2. Slice green onions, dice bell pepper, shred carrots and roughly chop cilantro. Add to bowl.

  3. Dressing:

    In a small bowl, whisk together all dressing ingredients.

  4. Pour over salad and toss to combine.

  5. Top with additional sesame seeds, if desired.

    Or use slivered almonds for crunch.
Note

If making the salad ahead of time, store the salad and dressing in separate containers. Combine and toss right before serving. This will keep the salad from getting soggy.
